Protein Ginger Nut Biscuits:

Makes 6:

Ingredients:

  • 60mls water
  • 60g whey protein
  • 40g Vitafibre
  • 10g coconut oil
  • 1 teaspoon baking powder
  • 2 teaspoons ground ginger

Method:

  • Combine the water and vitafibre in a pot and heat until the the mixture turns clear,
  • Add the coconut oil and allow it to melt
  • In a bowl combine the remaining ingredients.
    Mix the wet and dry ingredients and add spoonfulls of the mixture to a baking sheet
  • Bake at 160º for 15-20 minutes or until golden brown
    Allow them to cool and then serve
