Vitafibre almond biscotti


Makes 12:


  • 80g vitafibre powder
  • 100g vanilla whey
  • 1 Teaspoon of almond essence
  • 50g almonds
  • 30mls water
  • 1/2 teaspoon baking powder


  • Heat the water and the vitafibre powder in pan on a low heat, keep whisking the mixture until it turns transparent
  • In a dry bowl mix the remaining ingredients
  • Pour the vitafibre into the bowl with the dry ingredients and mix to form a stiff dough. (If it seems to dry, you can add a little water to loosen it)
  • Shape the dough into a loaf shape (pictured below) and bake for 10 minutes at 180ºCscreen-shot-2015-09-01-at-19-39-00
  • When its golden and solid, remove it from the oven and allow it to cool completely before cutting it
  • Cut it into long strips and return the biscotti to the oven for a further 5-10 minutes turning once half way through.
  • Allow the biscotti to cool before serving, (when it cools it will turn brittle)
